We just photographed a new taqueria owned by our friends Juan, Ramiro and Enrique in Milwaukee. It’s called Tacolote, which we are told translates to “owl” in Spanish. Everything is very fresh, authentic and delicious! The restaurant and the food are vibrant and colorful, which make a photographer’s job a lot more fun! While shooting, I was gulping down their Agua Fresca (Spanish for “fresh water”) which is a simple, refreshing beverage made with water, fruit and a little sugar, then liquified in a blender and served over ice. Simple, healthy and exotic (at least to me!)

Here is the recipe from Tacolote…best of all, it’s really hard to mess it up!
Tacolote’s Agua Fresca
Puree 3 cups of fresh fruit, press puree through a sieve and discard any solids. Mix the sieved puree with 2 cups of water, 2-4 tablespoons sugar and some lime to taste. Serve over ice.
